Ahmad Nabulsi returns to his native Lebanon every few years to see family. But he brings its flavors to Omaha six days a week at El Basha, the restaurant he started with his brother, primary owner Zuheir Nabulsi, about three and a half years ago. Q.Describe the food at El Basha. A.It's very traditional dishes, the main things everybody eats in Lebanon. We use a lot of olive oil, garlic. We do hummus, falafel, baba ganoush and a lot of good salads. Our main dish is called a shawarma, which is similar to a gyro. We take a big piece of beef and slice it very thin and marinate it in special sauce for 48 hours. Then we stack it piece by piece until it looks like a big cone and every so often we put in slice of fat so it's not dry. And as it turns around (on a vertical rotisserie), it cooks. There is a beef shawarma and a chicken shawarma. We also have gyros.

At first glance, there is little to distinguish the Jade Palace from many other family-run Chinese restaurants that call the metro area home. The restaurant is small, with a nice dinning area and comfortable booths. Its walls are hung with Asian art, and a loudspeaker plays muted eastern music. The menu is primarily staples - egg roll, fried won ton, sweet and sour pork and various dishes representative of Mandarin, Hunan or Szechuan cuisine. But the menu also has a small section of Malaysian cuisine, and that's how the Jade Palace separates and distinguishes itself. The Malaysian dishes are from family recipes of owners Steve and Shirley Yau and differ from the Chinese dishes, according to a menu blurb, "by the careful use of spices from the East to enhance the flavor of each dish."
