Edelweiss is a really sad one. They moved up a couple blocks into a bigger space as they needed the room then business died. Of the few German restaurants around town, it was easily the best.
You did miss a big one though, that being Back to Back to Guangzhao, only Chinese I know of in town to do real dim sum.

Yeah I just started this list, so I missed a lot of places that closed in 2007.
I know you can get Dim Sum at Grand Fortune and New Gold Mountain. Both are decent, but nothing spectacular.

Tin Star and Moe's Southwest Grill. The only one left is in Bellevue.
